I really liked the mild, but still flavorful base and the batter gave the dish some heft, so it was filling. I added rice and ate a stuffed grape leaf from a side order. A generous sized appetizer, so I reheated the half leftover for lunch the next day. Maybe even could have been 3 meals! I used a pot and it came out well. The sauce was great and I didn’t care I couldn’t taste the maple balsamic glaze. Likely because it shifted in transport. I would’ve been fine with less avocado because of the brown spots, but I did a little scraping. I’m not sure an entire sprig of rosemary is needed; in the interest of not wasting I sprinkled leaves on top. rjprescott61 avisThis Sweet Potato Kale Quesadilla with caramelized onions and roasted sw pots was delish! I ordered vegan cheese. I liked the kale’s heartiness and fresh salsa a nice side. GF an option, but pictured is regular. Humongous for me; I ate half and reheated the rest for lunch the next day and made it crispier.
