Kale & Edamame Salad

My go-to salad from Trader Joe's. Tender kale, juicy tomato's, crisp kale, creamy dressing. My one issue would be the amount of calories that come from the dressing due to the oil content.

Nice pre made salad with a flavorful lemon herb dressing! It has tons of cranberries. I like to add in roasted bbq chickpeas.

This was so yummy! I was shocked to see that this “creamy” sauce was vegan. Great combination of flavors.

This is a great salad for when you need something quick and nutritious. It's filling with the vegan-mayo dressing, edamame and almond's. It's a nice combo of sweet cranberries, juicy tomatoes, soft edamame and crunchy kale. The one critique I have is that the dressing is almost half the calories of the dish. I wish there was a way to make the dressing more wholesome and with less oil.

I actually love this salad. It is super filling and delicious. I’ve taken it on flights before as a meal and it kept me well satisfied. Only downside is that there isn’t enough dressing and it’s not organic. #traderjoes #salad
