Another dish I enjoyed at Smorgasborg were these delicious Mole Tacos made with Oyster mushrooms
in a blue corn tortilla. It makes feel so nostalgic and happy to know that I can still enjoy traditional Mexican foods and still be plant based. You do not have to leave your culture behind to become vegan🌱 (Todo Verde is not an official restaurant but they do pop-ups and delivery as well as cooking classes!)
