Vegan Trio Enchiladas (V137)

I loved this dish, and the availability of vegan options here. Everything was amazing. Each enchilada was different and came with a different sauce. The portion size was large and satisfying. #sandiego #enchiladas

One of the many things that are already made vegan at Rachos Cocina - no customizing necessary. Three varieties of enchilada (one enfrijolada, one tofu, and one blue corn avocado). Nice way to try a variety. All of them are delicious!
