Smoked three-bean Sriracha chili-quiles

[Note this is the vegan option not the standard menu version which has chicken eggs] What we call chilaquiles is “chili-quiles” - chips, their menu chili, and typical Tex-Mex garnish. Their chickpea-based egg substitute is very good, but this dish lacked a kick.
