Roasted Sweet Potato and Guacamole

Presentation looked so fancy ! Soft, yummy tasting sweet potato with a guacamole topping. Loved the drizzle of balsamic vinegar and little pieces of red pepper. I enjoyed all the flavours and textures immensely.
