Roasted Eggplant toasted sandwich

This was from the Specials blackboard, not the main menu. They have vegan mayo so just make sure you request that. Deep, rich grilled or roasted brinjal with fresh tomato, onion, rocket greens and beetroot hummus, and mayo between chunky toasted sourdough slices. Too much mayo for my taste but that's personal. It didn't need any at all IMO. Really beautifully plated, skillfully prepared and absolutely scrumptious. I hope this moves to their main menu. It's a win.
