Umami broth cooked with aromatic alliums, giving it more depth in flavour compared to The Kind Pho which is milder and sweeter. Wow. This was just wow. There were slices of vegan meat. The soup was really fragrant thanks to the mint and shallots. Probably one of the tastiest vegan pho I’ve had.

Hm tbh I’d opt for the regular pho, didn’t find the premium ingredients especially amazing! But my sis said the soup seems to have improved from our previous visit, it’s more dark/ gao now 😝

okay full five stars for this amazing bowl of pho… $14.90 and for the quality of ingredients, I’ll say it’s well worth it. the broth was light yet so deep in terms of flavour, a little like a ramen broth but had so many dimensions to it. had so much going on and could taste each herb which I loved (except the coriander - I took them out HAHAHA) the seitan pieces were so chewy and really feels like beef. ham/fishcake slices were chewy and tbh didn’t add much to this but still yums. only thing I didn’t like were the raw beansprouts, but still an incredible noodle dish.
