Phở Hà Nội (Vegan Hanoi Pho)

I'm A HUGE fan of pho, and it was so difficult to find vegan in Vietnam. This was flavorful, savory, and so complex - missing none of the taste from the tradition beef bone broth (😭)

Flavourful broth, good selection of garnishes. Glad this was my first pho in Vietnam

When it comes to pho, I’m team #Hanoi cos I prefer the taste and comfort of a savoury broth compared to #Saigon pho which is usually sweetened with sugar and eaten with Sriracha (no thanks! I like mine with cut chilli). The noodles were perfect and the broth was so rich and flavourful despite being plant-based ugh so good!
