Parmigiana

This is a small informal pizzeria in Brescia that offers some vegan pizzas as well. The place is very simple and nothing fancy. On top of the pizzas they also had some vegan desserts available. I tried the parmigiana which is with vegan mozzarella and fried eggplant. The dough was good but the crust is very thin and crunchy, so depends on the personal taste. I found the vegan mozzarella to be very creamy and savory. The combination of all ingredients worked great. The service was very nice although a little bit slow, but the night we were there the place was packed. Pizza molto semplice ma gustosa: pomodoro, basilico, “formaggio” vegano, melanzane fritte. Buon impasto molto leggero come da loro tradizione. Da provare come le nuove proposte della Nuova Casetta, che con questa ora ha 5 pizze vegane.
