Mac n Cheese

When I went SunCafe, I was really craving some good old #comfortfood and this mac n cheese delivered. It was super super hit, though, and I was so excited to dive in that I burnt my tongue a little (oops). Made with cashew cheese, it is loaded with vegan cheesy goodness. It was maybe even a little too cheesy for me, but I definitely left satisfied. The tomatoes in it added some great freshness and juiciness to the dish. You can also add tempeh bacon or vegan chorizo if you want a little more flavor and texture variety, and I would definitely try that next time!
