Kale pesto zoodle

The Chinese dish name said "cucumber noodles" so my friends were thrown off by the fact these were zoodles😂 But they said it was very refreshing and satisfying even though they weren't carb noodles. And I love the plating as well - it looks wild and fresh.

A great dish with lots of nutritious value. The pesto is creamy and garlicky. The zucchini noodles are soft, and the lotus root crisps are fabulous addition to taste and texture.
