Flower Power Tower

I really enjoyed this dish. The mushrooms had a sweet balsamic glaze, the tamatoes were juicy, the potato crispy. My only complaint is that I wasn't quite full after.

This is a rosti "sandwich" with a mushroom filling and tomatos and pesto on top. The avo is extra. Filled me up for the day!! #greytonfarmanimalsanctuary
