Eggplant sushi

Excellent dish, I would have ordered 1000 of this. It’s an #eggplant #nigiri , it’s meant to be a #plantbased version of eel nigiri, which I used to devour in China before going vegan… it was a perfect substitute for me, the eggplant was so well marinated and cooked, I really loved this dish.🍆 #vegansushi #japanesefood #japan #plantbasedjapan
