Chickpea “Tuna” Salad Sandwich

I was so lucky Eliza’s food truck came to my town … I was thrilled as it’s normally a long drive and a day trip to get to the cafe …. This “tuna” salad sandwich was awesome… I do t know what spices they use … but it’s the perfect mix … I have to say this is the best chickpea “tuna” I have ever had … and I’ve tried many … so many .. like the pickles went right into the sandwich… The side was chickpea fritters which never disappoint..
