Beauty and the beet

Super flavorful beets served on a heavenly masoor dal hummus with Swiss chard, an interesting pop of green apple, mung bean sprouts and tasty cashew and curry leaf pangrattato- the combination is delicious- to make it heartier, add an order of the Bombay style potatoes- so much flavor:)
