Banh Xeo Rolls (Vietnamese Pancake Rolls)

Banh Xeo looks like an omelette, but is actually a rice pancake made using rice flour and coconut cream, coloured yellow with turmeric! This version came rolled with mushrooms, tofu, carrot, and cabbage into a lettuce and rice paper wrap. Definitely a more unique and satisfying option among the spring rolls in the menu, would recommend! Alternatively, the Banh Xeo is also available in pancake form instead of a roll.
