This is a perfect example of a non-vegan restaurant nailing the vegan option instead of simply having a token vegan option on the menu! I’ve had this multiple times over the years and it remains a dish I love. The noodles are really chewy and springy, and their toppings are varied and plentiful (vegan egg, soy mince, edamame, sweet tofu skin, cucumber and tomato strips and more).
