This consisted of enchiladas filled with lively, meaty Mexican soy chorizo with roasted potatoes and luscious melted 🌱-based cheese, and covered in a rich, velvety, deeply flavorful, sweet and spicy mole sauce that blended chiles and chocolate. Topped with sunflower crema and almond queso fresco. They were fabulous.
