Ok this is kind of hard one of me to explain and it doesn’t look like much,, but triste me it’s one of my favorite #costarican dishes! Because this was takeout it doesn’t look as good either and it does not show all the veggies, so I included an internet picture at the end for reference.
Basically, “pot of beef” is a delicious #stew that originally consists of slow-simmered beef with a wide variety of vegetables. We used to eat this as kids all the time and all Costa Rican moms and grandmas know how to make it to perfection. What is funny about this dish is that I never ever ate the meat, like since before I became a vegetarian. I never liked it but the broth and especially the veggies were my absolute favorite part. It has all sorts of veggies, carrots, potato, sweet potato, different types of squash, plantains, corn on the cob, you name it!
This one, is the vegan version of course!! I think the “beef” is made with seitan and it was really good! The broth had so much flavor and the veggies were cooked to perfection! This dish is from one of my absolute favorite Costa Rican vegan restaurants, “The Vegan Corner” and what I like is that home made taste of all their food, as if my grandma had just cooked me a vegan pot of beef! I think it came with a side of rice and it was maybe around $6-7? To me it’s great valid for how good it was and I’m pretty sure it included a drink also. Highly recommend this dish and restaurant if you ever go to #costarica
