A standout meal - who knew lentils could taste this good! Really appreciate the use of three different kinds of lentils: beluga, puy and umbrian which have a variety of textures and depth of taste. The addition of corn, avocado, onions, tomatoes, carrot, celery, chicory and pecan each just elevated this dish to the next level. And ofcourse the dressing - pomegranate and apple vinaigrette really sealed the deal. Healthy, filling, absolutely delicious 🤩
