Review of Pizza Rosso at Roberta’s Pizza by vikas
Such a shame this couldn’t be better!
For context Roberta’s is an old school NYC pizza institution that’s been around from when your grandma ate pizza there. It’s awesome, super reliable and always great.
The Singapore branch is sadly not there yet. They use really poor quality flour and it shows. The ingredients were ok, and adding mushrooms, red onions and Calabrian peppers made this 12 inch pizza about $35 😳 but it would have been fine if the dough was good. If you can’t make great pizza dough you can’t make good pizza. I can go on and on about water ratios, fermentation and proofing but the bottom line here is the pizza needs a lot of work before it deserves the Roberta’s name.

cloudyaquilegia I have a good friend living in Columbus, she is half italian and I remember the pizza evenings she made for us when she still lived in Switzerland... she is such a good cook! I should tell her there is a lacking area, in case one day she wants to reinvent herself and change job 😅🤣😇Reply

plantcircles Funny how a photo looks good, but the story tells do much more. Flour is everything for good pizza. The cost isn’t acceptable though. $35? Why?? $20 maybe, but that’s a failure to find a cost efficient t way to make affordable and healthy street food. Pizza is a human right, not a commodity! Lol1 likeReply
