I was so happy to learn that this palabok mix is vegan!! Palabok was one of my favorite Filipino dishes growing up and this was my first time having it since going vegan! I prepared it by following recipe on the back but omitting the animal products as suggested. I added in some scrambled tofu for the egg, then some green onions and minced fried garlic chips on top for garnish. It was such a nostalgic and delightful meal :D definitely will make it again soon and possibly add some crushed vegan chicharrón on top. Yum
