Dish 6 - Romaine Lettuce w "Sea Urchin" & "Salmon Roe"

The "sea urchin" is made up of mashed pumpkin that's infused with rich flavor that probably comes from their seaweed broth. The "salmon roe" is exactly like the real thing, which literally burst with umami flavor in your mouth when bitten. The sushi rice in the middle gives this dish some density, while the lettuce lightens and freshens the overall taste with an added crunchiness.

I really enjoy this one a lot, as I feel that all the elements complement so well with each other as a whole!
