Denmark is not the most vegan friendly country in Europe but there are some great finds, mostly in Copenhagen. I've read many great reviews about Eden Jaxx and went to try it for myself after struggling to find any vegan food for a whole week during my first business trip to Central Denmark since Covid. I didn't love my "burger" bowl, overall, it was rather unimpressive, but the grilled celery root was absolutely delicious! Friendly stuff, multiple locations, I would give this meal 3/5
