*edit: used them a few times to confirm that they have some impurities (they feel like stones?) that feel extremely unpleasant and I WILL not buy this brand of amaranth again!! I bought amaranth from Buy Whole Foods Online before and theirs didn’t have this problem at all.
I use amaranth as a substitute for cod roe (which is eaten regularly in Japan), and it works pretty well! I like the texture and if seasoned right, it doesn’t taste that grainy at all. I usually make my spicy potato salad with it :)
