
In an ideal world I’d be able to always make my favorites from fresh ingredients. In my actual world though, I find the forgotten squash in the crisper drawer just after they’re liquified. And so this is a go-to back up plan now. Every Margaret Holmes vegetable I’ve tried is heavier on the salt than necessary, but these are worth the trade off in always being on hand for a super quick and easy, no prep version of my favorite squash, tomato, onion casserole any time I want one.
