My absolute favourite sweetener!

It's a little pricey but if you think about the amount of syrup that needs to be extracted from trees and the subsequent processing, the price becomes acceptable.

I use it to sweeten pancakes, protein shakes, teas, matcha but it also works extremely well when added to savoury dishes. For example, I often add it to vegetable noodles with tamari/coconut aminos and let it caramelise to form a sticky sauce. It also makes a perfect sauce to contrast bitterness of tempeh!
