Gluten-free pasta sheets layered with tender zucchini, wilted baby spinach, finely minced locally farmed mushrooms, tomato fondue, housemade garlic cashew sauce, and #violife mozzarella #vegancheese. 🥒🥬🍄🍅🧀 Indulgent without being cloyingly so! Not overloaded with starchy carbs either, since there were layers of vegetables instead, which also added variety in taste and texture. I especially loved the diced mushrooms; natural ingredients can be tasty in their own way, without any need for processed plant-based meat substitutes. There were some fresh microgreens as garnishing too. 🥗 Good vegan lasagna is hard to come by in Singapore, and I was honestly really impressed by this!! Gluten-free spaghetti tossed with button mushrooms, wilted baby spinach, and green peas - yay for natural plant protein! 🍝🍄🥬🫛 An absolute umami bomb with the sun-dried tomato, thick and creamy housemade tomato cashew sauce, as well as shredded #violife mozzarella #vegancheese. 🍅🧀 Usually the conventional vegan pasta options available at omni eateries tend to be more basic and boring. This, however, was very different and delicious!! Surprisingly, they had a vegan version of their Full English Fry-Up Breakfast! Featuring grilled #beyondmeat 'sausage' which my non-veg friend found quite 'meaty', sliced eggplant 'bacon' which was deliciously smoky, creamy scrambled tofu (instead of eggs) that was creamy though predominantly tasting of turmeric, and lastly sourdough toast smothered with smashed avocado (in lieu of butter). 🥓🍳🍞🥑 Appreciated their effort in veganising these items, especially the bacon made with natural ingredients which isn't commonly done in SG! 🍆 Other components were the more standard fare found across both the vegan and non-vegan big breakfasts - locally farmed mushrooms, juicy roasted cherry tomatoes, baked beans, and crispy potato hashbrown. 🍄🍅🫘🥔 Everything on the platter was tasty and enjoyable, albeit slightly salty and greasy as with most indulgent big brekkies~ (And kinda pricey 🙈 but a good option nonetheless when dining with non-veg folks!)
