I forgot to post this dish from another Earth Vegan hotel. Not only is it a hotel, but you can enjoy the restaurant if you choose not to stay. Fresh mushrooms marinated in lime infused with cilantro. It was a great starter. The plantains gave it a nice touch so you can dip into the ceviche.

I finally made it to the ALL Vegan hotel in Costa Rica. My first meal and it was amazing. Handmade zucchini and eggplant shells are stuffed with a rich mushroom medley topped with pomodoro sauce and parmesano cheese.
