Went to Gather Greenville with some friends and found these vegan tacos as an option (You do have to ask to remove the cheese to make it vegan)! They’re double corn tortillas filled with roasted sweet potato chunks and plobano peppers, diced onion, sliced radishes, cilantro, roasted pepitas, and lime wedges. It was tasty and I loved the mix of cooked and fresh elements, but it was not my favorite taco, as the sweet potato is a little odd. I was grateful for the option and it was fun to try something new! My friends got chips and guac and a smoothie bowl from Cocobowlz, which they enjoyed.
