The finale to our wonderful vegan meal was this dessert comprised of fried #phyllo dough, #strawberry, #apple and #pistachio. Chef Manuel passionately described it as a phyllo dough that had fermented for 4 or 5 days, fried until crispy. The sauce at the base was his strawberry and apple compote, with another layer of his own pistachio sauce. Then layers of phyllo, fresh strawberries and apples, and drizzles of his sauces were topped with a sweet crumble and more pistachios. It had just the right level of sweetness. The mix of textures and flavors was mindblowing, and another testament to Chef Manuel's boundless creativity! To enjoy his vegan creations, call a day in advance to make a reservation and request vegan dishes. When I contacted Chef Manuel, he got so excited to have us and said he would make dishes based on what was available at the markets. He also mentioned that he would provide a dessert so that we could have a complete meal experience. So delicious, savory and unique!! Our second #gourmet #pizza was a celebration of #porcini #mushrooms and #cabbage. On top of the perfectly cooked chewy and crispy crust was a base of creamed #chickpeas, on top of which were cubed porcini mushrooms in a savory mushroom cream sauce. Then on alternating pieces there was cabbage sauteed in #tumeric to provide an additional crunch, and wonderful Sicilian olives sprinkled about. Then it was drizzled in a #whitebean and #tumeric sauce to broaden the flavor profile. In the middle were #endive leaves with a mound of sauteéd cabbage on top. Chef Manuel's pizzas are the most creative I have ever tasted! Our first of two #gourmet #pizza was made with #eggplant and #onion. The crust was perfectly cooked, chewy on the inside and a delicately crispy exterior. Then Chef Manuel explained that the #housemade sauce was made with five different types of #tomato! It was so thick and rich. The pizza slices alternated with different versions of the main ingredients: or fried eggplant and onion, or roasted eggplant and onion. Each had its own subtleties and flavors! Then in the center there was a bomb of #mushroom and #truffle paté to dip into. An amazing taste experience - truly gourmet!! This #housemade #gnocchi dish with a sauce made of #legumes was out of this world! Under the beautiful sauce were two types of tender gnocchi - one classic with #potato and flour, the other with local #kale added into it. The sauce was made with eight (yes, 8!!) different types of legumes including #lentils, #redbeans, #whitebeans, #chickpeas and a host of others I can't remember from Chef Manuel's passionate description. Then the dish was drizzled with one sauce made with kale and the other with garbanzos, then sprinkled with homemade #breadcrumbs and fresh #basil leaves. This was a starter he created for us, split between the four of us. When I contacted this pizzería to ask about vegan options, the chef/owner suggested that our group do a "vegan tasting" of freshly prepared dishes that would depend on the garden harvest of the week. Oh my goodness we were delighted with 8 different delicious, varied dishes. At each course the chef explained the intricacies of the dish and we dove into vegan bliss. In order of the photos (chef, please forgive my simplistic descriptions!): 1. Starter of #beetroot with a #citrus marinade, served with grilled #endive 2. Assorted #focaccia 3. #veganeggplantparmesan sans cheese 4. Grilled, stuffed #redonion and #eggplant 5. Stuffed #redpepper, #greenpeppers, #yellowpeppers with homemade bread cubes 6. #ricenoodles with #saffron, #truffle, #squash and #carrot 7. Pizza that included #potatoes and #lentils, with a roasted #onion and #tomato relish 8. Dessert of fried fermented #pizzadough topped with #cranberry, #peach and #papaya Simply amazing experience!!!
