I’m not sure how easily this melts because I used this in a lasagna recipe mixed with other cheeses, and just about anything would melt in the high heat that lasagna requires. But I tasted a bit before adding to my recipe and it was pretty good. And that’s a great sign for me because a lot of times, I don’t like the taste of cheese that’s not melted yet.  I made my delicious lasagna using a non- vegan recipe. These shreds went in a mixture of Parmesan (which I made from scratch, with a recipe from Jane’s Healthy Kitchen), Ricotta from Kite Hill (also so authentic tasting), and even Just Egg, which helped with mixing, holding together and spreading the cheese mixture. Not much nutrients other then #vitaminb12 but is a great sub for dairy mozzarella, super convenient, and nothing really bad, unlike it’s dairy counterpart. I would get this again.
