I grabbed these super cheap at the grocery outlet ages ago and they've been in my freezer since. Last night I made a potato and dill soup and I wanted to add some cheesiness. I was short on time so I just plopped the frozen brick into the pot and stirred it as it melted, trying to separate the slices and chop them a bit too. It worked pretty well. These added a nice creaminess to the soup and a bit of cheddar flavour. I'll likely do something similar with the mozzarella slices I got at the same time.
