I love that this tsukemen place keeps adding plant-based options to its menu. This new veggie truffle ramen is quite lovely - the broth is umami and rich with truffley mushroom savouriness. It's paired with a crisp hash brown, bamboo shoots and green onions. Ask for the thick noodles to make this vegan - the thin noodles contain egg powder.
