Veggie Lasagna

I found Island Produce Club Vegan Restaurant 1 1/2 year ago and I'm fascinated with the food. One of the many dishes that I love is the lasagnas! Yum yum yum.

WOW! Being Italian, I thought I would never get to eat lasagna again after going vegan UNTIL I found Chef Kelly at IPC. She makes a different kind weekly and every one is just amazing! Now I eat it more than I ever did, without the guilt!
