Vegan Schnitzel Sandwich

Grabbed this when kitchen had closed for the day, i.e. fresh rather than toasted. The lack of heating had no impact whatsoever on how delicious this sandwich was! I love bread with a chewy crust and sourdough texture. This was filled with mayo, avo, a big golden crumbed schnitzel and spinach. The sandwich was also pretty hefty!
