Vegan Ice Cream Sandwich

I was pleasantly surprised to see that this ice cream shop had vegan ice cream and gluten free vegan cookies! The vegan ice cream is soy based so it’s not a soy free/ allergy friendly option, but it’s still really fun if you’re not allergic to soy! The gluten free vegan cookie was so good!
