Vegan Curry

This curry was pretty satisfying. It has potato, carrot, sweet potato, eggplant, fried tofu, coriander, shallot, lemongrass, and a yellow curry sauce, served with rice. It’s mild and is super filling with all the potatoes inside. This was warming and filling on a rainy day!
