Vegan Alambre

Solid dish. Have no idea how to eat it... as 3 tacos? 🤷‍♂️ Either way, the softness of the veggies, abundance of cauliflower, and vegan cheese gives me cauliflower cheese vibes. Not bad, but not what I was expecting.
