These vegan breakfast taco’s were delicious! A soft flour tortilla filled with toasted taco seasoned

quinoa, just egg, potato, and violife cheese with pico de gallo and a choice of either guac and/or salsa. The quinoa had a crunch that really made the entire taco. The potatoes and just egg were fried just enough to have a crisp outer-layer but soft inside. The pico de gallo would have been enough on it’s own, but I had to go full throttle lol they did not disappoint. The guac was creamy enough to spread on the tacos and the salsa was mild, just enough bite to it for a bit of heat. Two taco’s would be enough, but the dish has 3.

I highly recommend this dish. It is very filling!
