Tofu Caprese

Really cool interpretation on a caprese salad. The smoked tofu was really tasty and firm. The pesto and the pine nuts were a nice complement to the tomatoes. The micro greens garnish finished it off. It's also nice that they serve it with toasted bread. Will definitely get it again and prepare it at home.
