Rainbow Sprinkle Cake

i have wanted this cake for such a long time and i’m so happy i finally tried it; it was phenomenal! i’ve never had cake this vibrant in color that tasted this good. typically, vibrantly colored cakes quite literally taste like food coloring; however, i found that this cake lacked the typical “mild plastic” taste that many colored cakes have. the frosting was plentiful but not totally overabundant, and i loved all the sprinkles. 10/10 for both appearance and flavor! (any cake from this bakery will be a 10/10, but i really liked how well the flavor was maintained despite the vibrancy of the cake layers themselves)

While Pie, Pie My Darling describes this cake as “layers and layers of vanilla rainbow cake sandwiched with vanilla buttercream and covered in sprinkles,” I’d describe it as genius. Swipe right to see the cake is actually six layers thick. (By the time we got home, four layers had curiously disappeared.) Yum!
