PHỞ CHAY - Vegan Noodle Soup

I haven’t eaten too much pho because I feel like it’s tough to find flavourful and vegan versions out there? But the lunch lady killed it!! The broth was so good and I requested mine as a satay which was amaaazing. Jad didn’t and he preferred mine so highly recommend doing that! It came with king oyster mushrooms, fried tofu, bean curd, gai lan, carrots, and rice noodles.
