Incredible soft and flavourful mozzarella like cheese in crispy baguette with pesto. So good!

We had this cut in half and it was enough to share between two for breakfast. Gorgeous fresh green pesto (slathered on nice and thick) and the most delicious aged cashew cheese. Normally I struggle with baguette bread because I find it so chewy and overwhelming but this was so fresh that it was easy enough to eat. Upgraded to sourdoughs for this option and it taste amazing. Lots of veg and cashew cheese, the sauce is so so nice.
