Mediterranean Salad (Veganised)

Celebrating my friend’s birthday with a bang Utopia in town with beautiful views of our amazing city! This was part of a three-course meal. My friend’s son was so thoughtful of my dietary needs. So the Chef prepared this scrumptious salad. The roasted red peppers were a welcome. For some reason, I take forever to finish a salad as small as it is here 😂 but it is so enjoyable!
