Greek potatoes

I substituted tofu for the dairy feta cheese to make it vegan. And I substituted chick peas for the onions and spinach for the kale (but that’s because I don’t like kale). The vegan tzatziki was delish idiots and the entire dish makes me want to go back to Maryland just so I can have it again. (No charge for the substitutions).
