Fresh yet rich (thanks, avocado), these are a perfect summer treat. However, I've been spoiled with my vegan sushi so I wasn't blown away. Still, these are a delicious, surprisingly substantial appetizer. Careful though, they're quite delicate and fall apart easily!
Quite possibly the best vegan sushi I’ve ever tasted. Made with cauliflower rice, soft-shelled eggplant, purple cabbage, chia seed tobbiko, cashew unagi, avocado, cucumber, sriracha, and scallion-mayo. The eggplant tasted like fried shrimp, it was crazy! I was actually fighting my friend over the last piece of sushi.
