Crunchy Ginger Salad With Tofu

This was one of our favourite dishes from the entire trip. Simple but packed with flavour and interesting textures. Chatted with the owner/chef, and the crunchy element (not peanuts — fried beans, of some sort?) comes from a traditional Lombok salad.
