This sandwich in its original form is vegetarian friendly. With one minor tweak, it becomes
vegan friendly. This sandwich is served on ciabatta bread and has cucumber, tomato, roasted red peppers, fresh spinach, artichoke hearts, basil pesto and balsamic glaze. It normally is served with mozzarella cheese, but that is the one change that can be made to make this vegan friendly.
When biting into this, the basil pesto is an explosion of freshness. Then each bite after is a veggie celebration of flavor. The ciabatta bread is a nice tofu to where it has a slight crunch but not overly done with the bread to where you feel overly stuffed. This IS something I will be having again!
